It means: to attempt to do something even if you are not sure you will be successful. It is another way of saying TO TRY. This expression is often used with the question "Why don't you...?"
Example 1:
I know you don't like driving but you'd really save a lot of time if you took the car to work. Why don't you give it a try one day? I'll go with you if you like.
Example 2:
Paolo: It's impossible for me to understand films in English unless I put subtitles on in Italian.
Matthew: I know it's difficult at first, but I really recommend watching the film with English subtitles or with no subtitles at all. Give it a try! Once you get used to it, you'll see that it will really help you improve your listening comprehension!
